I'm Baaack!

Well it has defenantly been a long time now!  A lot has happened...I'll hit the high points...I've graduated and moved to the big city!  I'm looking for a job as of now, so I am doing a lot of crafts and trying some new recipes.  I'm going to try to learn to knit...it shouldn't be hard, I'm pretty good at crocheting, so I think I can handle it!  I'm getting a head start on next years Christmas...I know it may seem early, but I like to make gifts for my family since I have so many people to give to.  Any who...tonight I made Biegnets...Let me tell you, they are delicious!  I did it in honor of Disney's new movie, Frog Princess...me and the boyfriend went to see it opening weekend...it is a delightful movie and everyone should go out and see it, and everyone should try this recipe!!

3 cups flour, divided
1/3 cup sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon nutmeg
1 cup buttermilk
1/3 cup water
1 egg, beaten
½ teaspoon vanilla
Vegetable oil, for frying
Confectioners' sugar, for dusting

1. Whisk together 2¾ cups flour with the sugar, baking powder, soda, salt and nutmeg. Set aside.
2. Whisk together the buttermilk, water, egg and vanilla. Stir in flour mixture.
3. Dust your work surface with flour. Place dough on top and pat it into a large ½-inch thick square. Slice dough into 2½-inch squares.
4. Ask an adult to help

you heat 2 inches of oil in a heavy saucepan, until the temperature reaches 325 degrees. Carefully drop 3 dough squares into the hot oil. Fry them for 3 minutes, flip and continue frying 3 more minutes. Use a slotted spoon to transfer the beignets to a wire rack over paper towels to drain. Dust with confectioners' sugar.

I had to use extra flower, and make sure to cut thin slices because these suckers puff up to be huge!  The one in the picture was prolly cut a half inch thick, and it came out that big...
